Creamy and Delicious Kulfi Ice Recipe

Ingredients:

  • 2 cups full-fat milk
  • 1/2 cup condensed milk
  • 1/4 cup sugar
  • 1/4 cup finely chopped nuts (such as almonds, pistachios, or cashews)
  • 1/2 teaspoon cardamom powder
  • 1/2 teaspoon saffron strands (optional)
  • 1 tablespoon rose water (optional)

Instructions:

  1. In a heavy-bottomed saucepan, bring the full-fat milk to a boil over medium heat. Stir occasionally to prevent the milk from sticking to the bottom.
  2. Reduce the heat to low and simmer the milk until it reduces by about one-third of its original volume, stirring occasionally. This process can take approximately 30-40 minutes.
  3. Add the condensed milk to the reduced milk and mix well until fully combined. Let it simmer for another 5 minutes.
  4. Stir in the sugar, chopped nuts, cardamom powder, and saffron strands (if using). Mix well to ensure all the ingredients are evenly distributed.
  5. Remove the saucepan from heat and let the mixture cool to room temperature. Once cooled, add the rose water (if using) and mix well.
  6. Pour the mixture into popsicle molds or small disposable cups. Cover the molds with aluminum foil or popsicle sticks and freeze for at least 6 hours or overnight until the kulfi ice is completely set.
  7. To serve, briefly dip the molds in warm water for a few seconds to loosen the kulfi ice. Gently remove the kulfi ice from the molds and serve it on a plate or in a bowl.
  8. Garnish the kulfi ice with additional chopped nuts, saffron strands, or a sprinkle of cardamom powder, if desired.
