Creamy Delights: Dudh ki Sewiyan Recipe for an Eid ul Adha Sweet Treat

Ingredients:
1 cup vermicelli (sewiyan)
4 cups milk
1/2 cup sugar (adjust according to taste)
1/4 cup ghee (clarified butter)
1/4 cup mixed nuts (almonds, pistachios, cashews), chopped
1/4 teaspoon cardamom powder
A pinch of saffron strands (optional)
1 tablespoon raisins (optional)
Instructions:
Heat ghee in a deep saucepan or kadhai over medium heat.
Add the vermicelli and roast it until it turns golden brown, stirring continuously to prevent burning. This will take about 4-5 minutes.
In a separate pan, heat the milk over medium heat until it comes to a gentle boil.
Add the roasted vermicelli to the milk and simmer on low heat, stirring occasionally to avoid sticking, for about 10-12 minutes or until the vermicelli becomes soft and tender.
Add sugar and mix well until it dissolves completely. Continue simmering for another 5 minutes.
Add cardamom powder and saffron strands (if using) and mix well.
Remove from heat and let it cool for a few minutes.
Garnish with chopped nuts and raisins (if using).
Serve warm or chilled, as desired.

Note:
You can adjust the sugar quantity according to your preference. If you prefer a thicker consistency, you can cook the vermicelli for a little longer.
