Creamy Delights: Dudh ki Sewiyan Recipe for an Eid ul Adha Sweet Treat

Ingredients:

  • 1 cup vermicelli (sewiyan)
  • 4 cups milk
  • 1/2 cup sugar (adjust according to taste)
  • 1/4 cup ghee (clarified butter)
  • 1/4 cup mixed nuts (almonds, pistachios, cashews), chopped
  • 1/4 teaspoon cardamom powder
  • A pinch of saffron strands (optional)
  • 1 tablespoon raisins (optional)

Instructions:

  1. Heat ghee in a deep saucepan or kadhai over medium heat.
  2. Add the vermicelli and roast it until it turns golden brown, stirring continuously to prevent burning. This will take about 4-5 minutes.
  3. In a separate pan, heat the milk over medium heat until it comes to a gentle boil.
  4. Add the roasted vermicelli to the milk and simmer on low heat, stirring occasionally to avoid sticking, for about 10-12 minutes or until the vermicelli becomes soft and tender.
  5. Add sugar and mix well until it dissolves completely. Continue simmering for another 5 minutes.
  6. Add cardamom powder and saffron strands (if using) and mix well.
  7. Remove from heat and let it cool for a few minutes.
  8. Garnish with chopped nuts and raisins (if using).
  9. Serve warm or chilled, as desired.
